When exposed to heat, the little strips, or teeth, will begin to curl, and leave you with a dull edge. A knife hone which you see chefs using, does not grind an edge back onto the blade, rather it straightens the bent teeth without reducing the material of the blade. Not sure myself as I have purchased this set too,but I would be inclined to write or call cruissant and ask them as they are the merchant.. I thought they were but they are metal as they stick to my knife magnetic board. Maybe, when I received them I had to sharpen them to use them. I was happy with the knives once they were sharpened. They were a bit of a disappointment when I received them. Using a dishwasher will damage your knives, I recommend hand washing.
